Do people often carry pistols on their motorcycles for self defense against motorists?

Some do. I don't. I haven't felt a need to and I've been able to cope so far. The people I know who do carry don't advertise.
A word of warning for you - that paintball gun would not be considered non-lethal, just the opposite, actually.
