Hotrod engine running too cool?

I've got a done 350 w/ an edelbrock top-end kit (aluminum 170 heads, air-gap intake, 500 lift cam, 750 perf. carb.) which is running at 180 degrees highway or not. I need it to run at 210 to make good power, my cooling system is a stock water pump and

It would seem to me you could get a higher limit t-stat and if you have control over the fan, adjust it's limits. If you want to, they also make electric water pumps. You could tie this into the wiring for the electric fan so it only works when the engine
